Cake recipe: Jojo SiWA cake Ingredients: 120g (4oz) butter, softened and softened by half the cooking time(2 mins) 125g (1.25oz) flour, plus more for dusting (1 tbsp) 150g (3oz) sugar, plus extra for dustings (1/2 tsp) 130g (2.5oz) unsalted butter, at room temperature (1 egg) 150ml (2 tbsp) milk (2 1/2 cups) Preheat oven to 180C (350F).
Line two baking trays with baking paper and set aside.
In a medium bowl, combine the flour, sugar and butter and set over a medium heat.
Cook until the butter is soft, stirring occasionally.
Add the egg one at a time, stirring until the mixture begins to bubble and turns golden.
Remove from heat and whisk in the milk.
Bring the mixture to a boil, then reduce the heat to low and simmer for 2 minutes.
Add flour and stir.
Combine the butter and flour in a large bowl and set on a plate.
Add a spoonful of the mixture, mixing with a rubber spatula to ensure it’s evenly distributed.
Spread the dough out on the prepared baking tray and flatten it with a floured knife.
If the dough is too wet, spread a little more flour on top.
Roll out the dough about 2cm (1inch) thick, flattening it a little.
Press down on the top of the dough, pressing firmly to ensure the sides of the roll are flat.
Fold the edges inwards to form a rectangle.
Shape into a cylinder and press firmly with a pastry brush to ensure all the doughs edges are flat, and to ensure a good seal.
Repeat with the rest of the pastry dough.
Place the rectangle in a roasting tin, or into a roaster bag fitted with a rosette.
Brush the tops with melted butter.
Bake for 20 minutes, or until golden and cooked through.
Cool on a wire rack.
To make the cake, place the flour and butter in a small bowl and whisk until they are well combined.
Beat in the remaining ingredients and pour the cake mixture into a piping bag fitted over a large piping bag.
Pipe onto the cake trays, pressing lightly.
Cover and chill for 1 hour before slicing.

This recipe makes a 2.5kg (5lb) cake.
It has a nice rich flavour and is easy to prepare in the fridge.
You can also make it ahead of time by cutting it into squares and cutting it in halves, then cutting the halves into cubes.
Bake at 180C/350F for 40 minutes or until set.
If using a roast bag fitted for roasting, place one square of cake on top and pour hot water into it to steam the cake.
You should not be able to see the sides or bottom of the cake because of the roasting. 3.5.3208
