Lava cake is a favourite for many people in Britain because it is very healthy, light, has no sugar, and has a rich, creamy consistency.

1 large cake cake, cooled to room temperature (if you want a smaller cake, you can double the recipe, but you can also make it smaller if you want).

1 large egg white (optional).

2 teaspoons cinnamon.

1 teaspoon baking powder.

2 cups icing sugar (optional), plus more for sprinkling. 

1/2 cup lemon juice (optional) 1 cup icing sugar, plus more if you like. 

Mix the cake batter in a small bowl.

Spread it into a 9 x 13 inch cake pan.

Make sure you use the back side of the cake pan, otherwise it will get stuck.

Pour the cake into the freezer for at least 15 minutes, or until the edges are crispy. 

Bake for 15 minutes or until golden brown.

Remove from the freezer and let cool. 

When the cake is done, scoop out any remaining icing sugar.

Combine the lemon juice and icing sugar in a bowl and pour over the cooled cake.
