How to Make a Vegan Sweet Potato Cake (And Other Recipes)

Here’s how. 

Sweet potatoes can be used in baked goods and desserts, but if you want to use them in your vegan baking, you’ll want to make sure you’re using vegan butter. 

The recipe below uses coconut oil, which is great if you’re looking to replace butter.

Vegan butter can be found at any big box grocery store or on Amazon.

When you buy coconut oil online, it comes with a generous helping of sugar, which can make things tricky.

Instead, make your vegan butter with olive oil, coconut oil and agave nectar.

The agave is a tropical fruit that can be sweet, sour or spicy.

Agave nectars can be purchased in a variety of colors and can be mixed with other ingredients to create a variety that suits your vegan cake.

I like to use a mixture of brown and golden agave, which makes it a good match for the sweet potato.

Use an electric mixer to blend in the coconut oil until smooth and creamy.

Set aside.

Next, prepare your cake batter by placing your coconut oil in a bowl and stirring until it forms a dough-like dough.

Make a well in the center of the bowl.

Add your eggs and whisk until the mixture becomes light and fluffy.

Once your batter is done, form the batter into a ball by gently patting it into a flat cake pan.

Sprinkle a little coconut oil on top of the batter.

Bake the cake for 45-50 minutes or until the tops of the cake are golden brown. 

When the cake is done baking, remove it from the oven and transfer to a wire rack to cool. 

After the cake has cooled, carefully remove the cake from the pan. 

I usually add the vegan butter to a saucepan, place over medium-high heat and add a few tablespoons of water until it becomes warm and bubbly.

It will take a few minutes for the butter to melt.

Allow the butter mixture to simmer for a few more minutes before adding your chocolate chips and topping the cake with your favorite chocolate. 

Vegan Cake Ingredients: 1/2 cup vegan butter 1 tablespoon coconut oil 1 tablespoon agave syrup 2 egg yolks 1/4 cup vegan chocolate chips (or chocolate chips substitute) 1 cup vegan coconut milk (or soy milk substitute) Instructions: Preheat the oven to 350 degrees Fahrenheit.

Place your vegan coconut oil into a large bowl and whisk to combine. 

Then, place the butter, agave and chocolate chips in a medium saucepan.

Bring to a boil over medium heat and simmer for about 5 minutes. 

Remove from the heat and whisk the chocolate into the coconut milk mixture.

Once the chocolate is melted, add the egg yolk and whisk again to combine, until you reach the mixture reaches your desired consistency. 

Pour the chocolate mixture into a piping bag fitted with a piping tip, and pipe a small amount of the chocolate onto the top of your cake.

Pipe the remaining chocolate onto your top layer of cake. 

Spread the remaining coconut milk evenly over the top.

Bake for 45 minutes or 15 minutes or longer until the top is set.

Allow to cool for 5 minutes before removing from the pans and carefully removing the cake. 

  Serve warm.
